  • 16 oz. dry orzo
  • 2 cups cooked chicken (rotisserie or sautéed)
  • 3 cups unsalted chicken stock
  • 1 cup heavy cream
  • 5 garlic cloves, minced
  • 2/3 cup grated parmesan cheese
  • 1.5 cups shredded mozzarella cheese
  • 3 cups baby spinach leaves
  • 1 pint cherry tomatoes
  • Juice of 1/2 lemon
  • Italian seasoning, salt, and pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine cooked chicken, dry orzo, chicken stock, heavy cream, minced garlic, Italian seasoning, salt, and pepper.
  3. Gently fold in chopped spinach and cherry tomatoes.
  4. Pour the mixture into a large baking dish and top with half of each cheese.
  5. Cover with foil and bake for 30 minutes. Remove foil, add remaining cheese on top, and bake uncovered for an additional 10 minutes until bubbly and golden brown.
  6. Let cool slightly before serving; drizzle fresh lemon juice over portions.
