  • 1 1/2 cups uncooked orzo
  • 1/2 small red onion, diced
  • 1/2 cup kalamata olives
  • 14.5 oz marinated artichoke hearts
  • 1 cup cherry tomatoes
  • 1/2 cup peperoncini
  • 1/2 large cucumber
  • 15.5 oz garbanzo beans (chickpeas)
  • 8 oz feta cheese
  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil
  • 2 cloves garlic, minced or pressed
  • 1/4 cup fresh basil, chopped, plus more to garnish
  • 1 tsp dried oregano
  • 23 Tbsp fresh lemon juice
  • kosher salt and freshly cracked black pepper, to taste

Instructions

  1. Cook orzo according to package directions. Drain and let cool slightly.
  2. In a large bowl, combine cooled orzo with diced red onion, kalamata olives, artichoke hearts, cherry tomatoes, peperoncini, cucumber, chickpeas, and crumbled feta.
  3. In a separate bowl, whisk together red wine vinegar, olive oil, minced garlic, chopped basil, oregano, lemon juice, salt, and pepper.
  4. Pour dressing over the salad mixture and toss gently until well combined.
  5. Chill in the refrigerator before serving or enjoy immediately. Garnish with additional basil if desired.
